I'd like to think I can make food like this purely for photographic reasons. ... and the perk is being able to sample afterwards. :-)
So delicious. Here's a simple recipe you can feel good about.
one can of chickpeas (washed & rinsed)
1 cup of cooked & cooled quinoa/bulgur (its good to make a larger amount to keep in the fridge)
chopped dill (I love lots)
1/2 squeezed lemon
1 avocado sliced
1/2 cup green onion
2 celery stocks
fresh ground pepper
1 tsp flax seed oil (or any good oil on hand)
little bit of light mayo
Mix all this goodness up and you'd don't need to feel an ounce of guilt eating this.
