Caramelized Apple Ginger Rice Pudding....
Quite the fall treat I made for myself & others to enjoy today. There's something particularly awesome about puddings come fall time. It likely has something to do with cravings for warm dishes on cooler days.
Make some heaven for yourself. ;-)
3 tbsp unsalted butter
2 larger apples, peeled and diced
1 tsp cinnamon
1 cup arbario rice
1/4 tsp salt
1/4 cup honey
1/2 cup or less of candied ginger
4 cups of milk, divided
1) In a large saucepan over medium high heat, melt the butter.
2) Add diced apples and cinnamon and saute until browned and caramelized, about 7 minutes. Add the rice and stir to coat. Add the salt, honey, ginger and 1 cup of the milk. Lower to medium and cook, stirring freguently, until almost all of the milk has been absorbed.
3) Add another cup of milk, keep stirring over medium heat till milk is absorbed.
4) Add the third cup of milk... repeat..... and add the final cup of milk...keep stirring till everything is absorbed! Yes this is a bit of an arm workout!
You can serve this with ice cream.... but at 11:00am you can decide if its to early to consume ice cream. I had mine plain, warm right from the stove... It was amazing.
